Carl has 15 years experience working in professional kitchens, having worked his way up and developed his skills along the way. But his love of food began many years before that, watching and helping his grandmother in the kitchen.
She cooked from scratch, making her own sauces and taking the time to prepare food properly. Carl continues ithat tradition n the kitchen today, preparing his own sauces to complement his dishes, including faviourites such as tartare and horseradish.
For Carl, good cooking starts with fresh, carefully chosen ingredients and making the most of seasonal produce whenever possible.
Carl shares Billie's passion for quality local ingredients and believes it is worth paying a little more for good produce when you can taste the difference on the plate.
His style combines French cooking techiques with traditional English cuisine, bringing care and attention to the hearty, familiar food you would expect from a county pub.
